I feel like tomorrow is my first day of school. After not working for three months, I FINALLY get to go back. I thrive on having routine and structure so I'm V excited to go back to work. My husband is probably the most excited for me to return to work though as he tells me frequently "you're just always here". Since my schedule is returning to its regularly scheduled programming, that means I have to get my meal prepping game back on point. Here's some yummy ideas for the week.
Italian Baked Penne Pasta Casserole. This was amazing. We had some friends over with their kiddos and this was a total crowd pleaser and took minimal time to prep. It's gluten free and could easily be made dairy free (I topped it with mozzarella cheese). I also love casseroles because they're an easy way to hide veggies. I chopped up a container of spinach and threw it in the sauce and no one even knew. You can get the recipe here.

Don't these look like chicken nuggets? They're actually air fryer buffalo cauliflower nuggets and they were amazing. They're an easy and delicious way to sneak extra veggies into your diet. My husband loved them and he typically protests anything that's even remotely healthy, especially vegetables. There's an option to use butter or ghee for these and I used ghee and they turned out perfect. You can find the recipe here.

I'm clearly on a noodle kick this week I guess. I was craving all the comfort food and this nut free, vegan mac and cheese hit the spot perfectly. This recipe calls for "fakin bacon" but I don't eat soy so I left it out, although I'm sure it would taste good with real bacon too. For the sauce she gives you an option to use soy milk or another plant based milk and I used almond milk and then substituted the tablespoon of grapeseed oil the recipe calls for with one tablespoon of ghee. My go to pasta brands are either Banza pasta or Jovial Foods. Zucchini is basically tasteless so I plan to chop some up and sneak an extra serving of veggies in here too. These cheesy broccoli tots are another easy way to sneak vegetables in. These were kid tested and approved. They do call for eggs and cheese but nutritional yeast mixed with a liquid such as eggs typically mimics the taste of cheese pretty closely. It's on my to try list for the next time I make these. Last but not least on our docket for tonight's dinner is Kale Junkie's taco pasta. This is perfect for an easy Sunday night meal and makes great leftovers for the week. We've made this a couple times before. The recipe is gluten free and can easily be made dairy free. It does call for a small container of yogurt but I use 1/4 cup of full fat coconut milk in its place and you can't taste a difference. This is another recipe that's easy to sneak chopped up spinach in to. You can find the recipe here.
