Wahls Protocol and Cake Baking

Normally I would be really excited about having a three day weekend (obviously MDW is about significantly more than an extra day off) however since COVID I have a 7 day weekend every week so this feels like just another weekend? weekday? Unsure at this point. We spent the weekend at our cabin and it was actually nice to get away from the cities and have a change of scenery. I also participated in the “cut your husbands hair trend”. My husband is now hairless and I will never be a hairstylist. It’s much harder than it looks folks. Since this whole quarantine event happened, I’ve been getting into baking because I am obsessed with dessert but prefer the grain free, refined sugar free version of it. I recently discovered Sweet Laurel and her cookbook and I am OBSESSED. Normally recipes that are kept grain free and refined sugar free are super complicated and don’t taste super great but her recipes typically only contain between 5-8 ingredients and they are to DIE FOR. 10/10 I recommend to all my friends. I’m also a total nerd and love to experiment with all things wellness so I started the Wahl’s Protocol as an experiment. It allows wine a few times a week so I figured I could handle it. Terry Wahl’s is an MD who completely reversed her multiple sclerosis through diet and lifestyle. Food is the most amazing medicine if we use it correctly and I’m totally fascinated by that. I obviously don’t have MS but after getting off my birth control in January, I’ve struggled with getting my skin back to normal so I wanted to try something different. There are three different levels of the diet but essentially it consists of flooding your body with nutrients so that your cells can repair themselves and allow you to heal. It completely eliminates all dairy, eggs, gluten, and grains. It sounds much more overwhelming than it is, but I promise you still get to eat amazing food. Completely cutting out dairy (I’m obsessed with just a tiny bit of half and half in my coffee) has been the hardest, however I have found a couple really good substitutes. Anima Mundi has a really good coconut cream powder that you can just stir into your coffee and BONUS: it’s filled with beneficial MCT (medium chain triglycerides) which are good for your body and skin. Another brand I like for when I want something with just a hint of sweetness in my coffee is Laird Superfood original creamer. It also has MCT oil in it and then as a sweetener they use pure coconut sugar. Sugar is Sugar but there are only 2g per serving and this is much better than white table sugar. My skin has made noticeable improvement without eggs and dairy though so I’m calling this a win. I know that yogurt is a common snack for people too, and that’s been a tricky one to navigate, however I’ve found GT’s Coconut Yogurt acts as a good substitute. It’s also filled with beneficial probiotics for your gut and skin so it’s a winner in all departments. So far the main things I’ve noticed are less inflammation in my body and skin, and more energy. I’ll report back as I dive further into it. That’s all kids. Happy Memorial Day!
